Apple Glazed Spareribs (Barbecue) Recipes

Ingredients :

2lb spareribs

boiling water

1 bay leaf

4 peppercorns

1 tsp salt

small bunch parsley sprigs

small slice onion

1 tsp salt

1/4 tsp pepper

3/4 cup apple jelly

1 tbsp lemon juice

1.5 tsp Worcestershire sauce

dash Tabasco

1 tsp dry mustard

Method :

Cut ribs into 3-rib sections. Put them in a large kettle and cover with boiling water. Add bay leaf, peppercorns, 1 tsp (5ml) salt, parsley and slice of onion. Bring to a boil, turn down heat, cover and simmer 30 minutes. Lift out of water and drain well. Sprinkle ribs with 1 tsp salt and 1/4 tsp pepper at cooking time. Combine apple jelly, lemon juice, Worcestershire sauce, Tabasco and mustard in a small pan and set on back of barbecue to heat and blend. Brush ribs with apple jelly mixture and set over hot coals. Cook 10 minutes. Brush well with apple jelly mixture, turn and cook about 10 minutes. Continue cooking, brushing with jelly mixture and turning often until well browned and crisp, about 10 minutes longer.
