Barbecued Perch Recipes

Ingredients :

1lb frozen ocean perch fillets

1/4 cup melted butter or margarine

1 tbsp lemon juice

2 tbsp ketchup

1 tsp Worcestershire sauce

1/8 tsp dry mustard

1/2 tsp salt

dash pepper

1 tbsp finely chopped onion

2 tbsp chopped parsley

Method :

Thaw fish just enough to separate pieces. Heat broiler. Grease a shallow baking pan large enough to hold the pieces in a single layer. Lay fish pieces on pan, skin side down. Combine all remaining ingredients and spoon mixture over fish. Broil about 3 inches (7.5cm) from the heat (do not turn) until fish flakes easily with a fork, about 10 minutes. Serve immediately.

Serves 3
