Brie and Grape Sandwiches With Mint Recipes

Ingredients :

8 slices whole wheat bread

butter for spreading

12 oz ripe Brie cheese

30-40 large grapes

16 fresh mint leaves

Method :

Butter the bread. Slice the Brie into thick slices, to be divided between the sandwiches. Place the Brie slices on four slices of bread. Peel, halve and seed the grapes and put on top of the Brie. Chop the mint finely by hand or in a food processor, and sprinkle the mint over the Brie and grapes. Place the other four slices of bread over the top and cut each sandwich in half.

Other ideas for herb sandwich :

- Feta cheese, black olives, lettuce, tomato and freshly chopped mint in pita bread

- Italian salami, cream cheese, tomato and fresh basil on peasant bread

- Sliced chicken breast, mayonnaise and dill sprigs on whole wheat bread

- Grilled mozzarella and sun-dried tomato focaccia bread sandwich, with black olives, fresh arugula and basil leaves.

- Hummus, lettuce and freshly chopped coriander on French bread.

- Dry cured prosciutto, green olives and arugula leaves on poppy-seeded white bread

A slightly unusual sandwich combination, which works well judging by the speed with which the sandwiches disappear at family picnics or summer tea parties.
