Garlic and Marjoram Mushrooms With Pumpkin Seed and Tomato Bread Recipes

Ingredients :

Garlic Mushrooms :

12 oz mushrooms

3 tbsp olive oil

1 tbsp water

2 cloves garlic, peeled and crushed

4 tbsp chopped fresh marjoram

juice of 1 lemon

salt and pepper

Tomato Bread :

1/3 cup sun-dried tomatoes preserved in olive oil

scant 1 cup boiling water

1 tsp chopped fresh basil

1 tsp chopped fresh marjoram

1 tsp chopped fresh rosemary

generous 3 tbsp butter

1 tsp salt

4 cups plain flour

1 package dried yeast

3 tbsp olive oil

1 egg

1 tbsp pumpkin seeds, hulled

Method :
  1. To cook the mushrooms, put all the ingredients in a saucepan and bring the liquid to a boil, then turn down the heat and simmer for 10 minutes.
  2. Tip the mushrooms and liquid into a bowl.
  3. Refrigerate overnight.
  4. To make the bread, drain the tomatoes and chop roughly.
  5. Put them in a bowl and pour on the boiling water.
  6. Add the herbs and leave to soak for 20-25 minutes.
  7. Place the butter, salt and flour in a mixing bowl and rub the fat into the flour until the mixture resembles breadcrumbs.
  8. Stir in the yeast.
  9. Drain the liquid from the tomatoes, reserving the liquid, and heat this until lukewarm.
  10. Add the drained tomatoes.
  11. Mix the tomatoes and herb liquid with the olive oil and egg.
  12. Make a well in the center of the flour mixture and pour in most of the liquid mixture.
  13. Mix well to form a fairly stiff dough.
  14. If it is too stiff, add more liquid.
  15. Knead the dough until smooth, in the bowl or on a floured board or surface.
  16. Form into a round loaf shape and put this on a greased cookie sheet.
  17. Cover with a clean cloth and leave in a warm room until slightly risen - this will take about 30 minutes.
  18. Preheat the oven to 425F.
  19. Brush the loaf with a little water and gently press the pumpkin seeds into the top and sides.
  20. Bake for 15-20 minutes.
  21. Turn the loaf out on to a wire rack.
  22. Tap the upturned bottom.
  23. If the loaf is done it will sound hollow - if not, put it back in the oven for a few more minutes.
  24. Let it cool before slicing.

Garlic mushrooms are always popular, and this unusual Italian style bread makes a delicious accompaniment.
