Lamb Riblets in Barbecue Sauce Recipes

Ingredients :

4lb lamb riblets

2 tbsp cooking oil

14-oz can pineapple tidbits

1 lemon, sliced thin

3/4 cup chili sauce

1/3 cup finely chopped onion

2 tbsp brown sugar

2 tbsp vinegar

2 tsp Worcestershire sauce

1 tsp salt

1/4 tsp ginger

1/8 tsp crushed chilies

Method :

Trim as much fat as possible from riblets. Heat oil in large heavy skillet or Dutch oven. Add riblets and brown well. Drain pineapple, saving juice. Add pineapple and lemon to riblets. Combine all remaining ingredients and pineapple juice. Pour over riblets. Cover and simmer 90 minutes or until meat is very tender. Turn riblets often.
