Lamb Steaks Marinated In Mint and Sherry Recipes

Ingredients :

6 large lamb steaks or 12 smaller chops

Marinade :

2 tbsp coarsely chopped fresh mint leaves

1 tbsp cracked black peppercorns

1 medium onion, chopped

1/2 cup sherry

1/4 cup extra virgin olive oil

2 cloves garlic

Method :
  1. Place the mint leaves and peppercorns in a food processor and blend until very finely chopped.
  2. Add the chopped onion and process again until smooth.
  3. Add the rest of the marinade ingredients and process until completely mixed.
  4. The marinade should be of a fairly thick consistency.
  5. Place the steaks or chops in a shallow dish and pour on the marinade.
  6. Cover with plastic wrap and refrigerate overnight.
  7. Broil or barbecue the steaks on a very high heat until cooked, basting occasionally with the marinade.

The marinade is the key to the success of this recipe. The sherry imparts a wonderful tang.
