Picnic Fruit Loaf Recipes

Ingredients :

wholemeal flour

bran

salt

bicarbonate of soda

cream of tartar

French mixed spice

ground cinnamon

caster sugar

butter

golden syrup

milk

sultanas

mixed peel

Method :

Mix together the flour, bran, salt, soda, cream of tartar, mixed spice, cinnamon and sugar. Rub the butter through with your fingers until the mixture resembles breadcrumbs. Mix the golden syrup with milk and add gradually to the dough. Stir in the sultanas and mixed peel. Grease a "billy can" and lightly flour it. Put in the dough, bake in the ashes for 11/2 hours. If you cannot obtain a "billy can", use a loaf tin, tightly wrapped in several layers of foil.

Your friends or family will be really impressed if you produce this warm spicy cake at your next picnic. Make the dough before you leave home, of course, and bake it in the ashes of the fire at the picnic. In Australia the mixture is baked in a "billy can".
