Salmon Steaks With Oregano Salsa Recipes

Ingredients :

1 tbsp butter

4 salmon steaks, 8 oz each

1/2 cup white wine

1/2 tsp freshly ground black pepper

fresh oregano, to make 2 tsp chopped, plus sprigs to garnish

4 scallions, trimmed

8 oz ripe tomatoes, peeled

2 tbsp extra virgin olive oil

1/2 tsp superfine sugar

1 tbsp tomato paste

Method :
  1. Preheat the oven to 275F.
  2. Butter an ovenproof dish, put in the salmon steaks, and add the wine and black pepper.
  3. Cover with foil and bake for 15 minutes, until the fish is just cooked.
  4. Leave to cool.
  5. Put the oregano in a food processor and chip it very finely.
  6. Add the scallions, tomatoes and all the remaining ingredients.
  7. Process in bursts until chopped but not a smooth purée.
  8. Serve the salmon cold with the salsa, garnished with a sprig of fresh oregano.

This combination of salmon with piquant tomato works incredibly well. An ideal dish for a summer lunch.
