Vegetable and Herb Kebabs With Green Peppercorn Sauce Recipes

Ingredients :

8 bamboo skewers soaked in water for 1 hour

24 mushrooms

16 cherry tomatoes

16 large basil leaves

16 thick slices of zucchini

16 large mint leaves

16 squares of red sweet pepper

To Baste :

1/2 cup melted butter

1 clove garlic, peeled and crushed

1 tbsp crushed green peppercorns

salt

Green Peppercorn Sauce :

1/4 cup butter

3 tbsp brandy

1 cup double cream

1 tsp crushed green peppercorns

Method :
  1. Thread the vegetables on to the bamboo skewers.
  2. Place the basil leaves immediately next to the tomatoes, and the mint leaves wrapped around the zucchini slices.
  3. Mix the basting ingredients and baste the kebabs thoroughly.
  4. Place the skewers on a barbecue or under the broiler, turning and basting regularly until the vegetables are just cooked - about 5-7 minutes.
  5. Heat the butter for the sauce in a frying pan, then add the brandy and light it.
  6. When the flames have died down, stir in the cream and the peppercorns.
  7. Cook for approximately 2 minutes, stirring all the time.
  8. Serve the kebabs with the green peppercorn sauce.

Other vegetables can be included in these kebabs, depending on what is available at the time. The green peppercorn sauce is also an excellent accompaniment to many other dishes.
