Method :
- Cut the butter into small pieces
and beat in a bowl with the sugar, using an electric mixer, until
white and fluffy.
- Now add the eggs, one at a time.
- Gradually add the flour, folding
it in with a wooden spoon.
- Peel and slice the apples.
- Put half the cake batter into a
greased cake tin, 25 cm (10").
- Arrange half the apple slices over
it and cover with the rest of the butter.
- Arrange the rest of the apple on
top in a swirling pattern of apple slices.
- Mix together the cinnamon, sugar
and almond.
- Sprinkle over the top of the cake.
- Put it in a preheated oven
(180C/350F/Gas 4) for 40 minutes or until cooked.
- Test with a cocktail stick if it
comes out clean, the cake is ready.
- Remove from the oven, leave to
stand for 15 minutes, then turn out onto a wire rack.
