Ingredients :

For the Garnish :

self raising flour

ground cinnamon

caster sugar

ground almonds

Method :
  1. Cut the butter into small pieces and beat in a bowl with the sugar, using an electric mixer, until white and fluffy.
  2. Now add the eggs, one at a time.
  3. Gradually add the flour, folding it in with a wooden spoon.
  4. Peel and slice the apples.
  5. Put half the cake batter into a greased cake tin, 25 cm (10").
  6. Arrange half the apple slices over it and cover with the rest of the butter.
  7. Arrange the rest of the apple on top in a swirling pattern of apple slices.
  8. Mix together the cinnamon, sugar and almond.
  9. Sprinkle over the top of the cake.
  10. Put it in a preheated oven (180C/350F/Gas 4) for 40 minutes or until cooked.
  11. Test with a cocktail stick if it comes out clean, the cake is ready.
  12. Remove from the oven, leave to stand for 15 minutes, then turn out onto a wire rack.
