Apple and Spice Muffins Recipe

Ingredients :

2 cups white self-raising flour

1/2 cup wholemeal self-raising flour

1/4 cup Splenda artificial sweetener powder

1/4 cup unprocessed bran

2 tsp baking powder

3 granny smith apples, peeled, cored and chopped

1 tsp cinnamon

1 tsp mixed spice

1/2 tsp ground ginger

1/2 tsp nutmeg

1/4 tsp ground cloves

3/4 cup skim milk

1/4 cup apple juice concentrate

3/4 cup apple sauce

2 egg whites

50g plain low fat yoghurt

Method :

Preheat oven to 180C. Spray 1 1/2 muffin trays with vegetable oil spray. Sift flours and baking powder together into a large bowl. Add artificial sweetener, bran, all spices and chopped apples.

Place all other ingredients into a blender and mix well. Add liquid mixture to the dry mixture and stir well to combine.

Spoon into muffin trays (makes 18) and bake for 25 minutes. Cool for 5 minutes and then turn out on to a wire rack.

Makes 18 large muffins
