Baked Apples Recipe

Ingredients :

4 small apples

90g canned, unsweetened, apricots (or peaches), drained and chopped

2 tbsp sultanas

good pinch of ground cinnamon

125ml water

Method :
  1. Core the apples but don't peel them.

  2. Use a sharp knife to score skin of each apple around the middle.

  3. Mix the apricots, sultanas and cinnamon.

  4. Fill the center of each apple with the apricot mixture.

  5. Place the apples in a baking dish.

  6. Pour the 125ml of water around the apples.

  7. Bake in a preheated oven for 30 minutes, or until apples are completely tender.

  8. You may need to baste them with their cooking liquid from time to time.

  9. Serve hot or cold, with ice cream, low fat natural yoghurt or baked custard.

This time honored dessert is ideal if you are watching your calories.
