Method :
- Sauté the onions, carrots, garlic,
dill seeds and apple mint leaves in the olive oil until nearly
cooked.
- Stir in the flour and cook for
half a minute or so.
- Pour in the cider and simmer until
the sauce looks glossy.
- Boil the broccoli and cauliflower
in separate pots until just tender.
- Pour the sauce into a food
processor and add the tamari and the mint jelly.
- Blend until finely puréed.
- Pour over the broccoli and
cauliflower.
The cider sauce made here is also ideal
for other vegetables, such as celery or beans. It is flavored using
tamari, a Japanese soy sauce and apple mint.
