Broccoli and Cauliflower With Cider and Apple Mint Sauce Recipes
Ingredients :
1 large
onion, chopped
2 large
carrots, chopped
1 large
clove garlic
1 tbsp
dill seed
4 large
sprigs apple mint
2 tbsp
olive oil
2 tbsp
plain flour
1 1/4 cups
cider
1 lb
broccoli florets
1 lb
cauliflower florets
2 tbsp
tamari
2 tsp mint
jelly
Method :
Sauté the onions, carrots, garlic,
dill seeds and apple mint leaves in the olive oil until nearly
cooked.
Stir in the flour and cook for
half a minute or so.
Pour in the cider and simmer until
the sauce looks glossy.
Boil the broccoli and cauliflower
in separate pots until just tender.
Pour the sauce into a food
processor and add the tamari and the mint jelly.
Blend until finely puréed.
Pour over the broccoli and
cauliflower.
The cider sauce made here is also ideal
for other vegetables, such as celery or beans. It is flavored using
tamari, a Japanese soy sauce and apple mint.
