Chelsea Bun Recipe

Ingredients :

250 g self raising flour

1 tsp baking powder

2 tsp sugar

45 g butter

1 egg

125 ml milk

 

Fruit Filling :

60 g butter, softened

4 tbsp brown sugar

1 tsp ground mixed spice

250 g mixed dried fruit

 

Sugar Glaze :

1 tbsp water

1 tbsp sugar

1 tsp gelatine

Method :

  1. Sift together flour and baking powder into a large bowl.

  2. Stir in sugar, then rub in butter using fingertips until mixture resembles coarse bread crumbs.

  3. Whisk together egg and milk.

  4. Make a well in the center of the flour mixture and pour in egg mixture.

  5. Mix to form a soft dough, turn onto a floured surface and knead lightly.

  6. Roll out dough on a lightly floured surface to form a 20 x 30 cm rectangle.

  7. To make filling, place butter, brown sugar and mixed spice in a bowl and beat until smooth.

  8. Spread butter mixture over dough, then sprinkle with mixed fruit.

  9. Roll up lengthwise and cut into eight thick slices, using a sharp knife.

  10. Arrange slices over the base of a greased, shallow 20 cm cake tin and bake for 25-30 minutes or until golden.

  11. To make glaze, place water, sugar and gelatine in a saucepan and cook over a low heat, stirring constantly, until sugar and gelatine dissolve.

  12. Brush hot bun with glaze.

  13. Serve warm or cold.
