Method :
- Sift together flour and baking powder
into a large bowl.
- Stir in sugar, then rub in butter
using fingertips until mixture resembles coarse bread crumbs.
- Whisk together egg and milk.
- Make a well in the center of the flour
mixture and pour in egg mixture.
- Mix to form a soft dough, turn onto a
floured surface and knead lightly.
- Roll out dough on a lightly floured
surface to form a 20 x 30 cm rectangle.
- To make filling, place butter, brown
sugar and mixed spice in a bowl and beat until smooth.
- Spread butter mixture over dough, then
sprinkle with mixed fruit.
- Roll up lengthwise and cut into eight
thick slices, using a sharp knife.
- Arrange slices over the base of a
greased, shallow 20 cm cake tin and bake for 25-30 minutes or until
golden.
- To make glaze, place water, sugar and
gelatine in a saucepan and cook over a low heat, stirring constantly,
until sugar and gelatine dissolve.
- Brush hot bun with glaze.
- Serve warm or cold.
