Chocolate Mint Truffle Filo Parcels Recipe

Ingredients :

1 tbsp very finely chopped mint

3/4 cup ground almonds

2 oz plain chocolate, grated

2 apples, peeled and grated

4 oz crème fraîche or whole milk ricotta cheese

9 large sheets filo pastry

1/3 cup butter, melted

1 tbsp confectioner's sugar

1 tbsp cocoa powder, to dust

Method :
  1. Preheat the oven to 375F.

  2. Mix the mint, almonds, chocolate, crème fraîche or ricotta and grated apple in a bowl.

  3. Cut the filo pastry sheets into 3 in squares, and cover with a cloth to stop them drying out.

  4. Brush a square of filo with melted butter, lay on a second sheet, brush again, and place a spoonful of filling in the middle of the top sheet.

  5. Bring in all four corners and twist to form a purse shape.

  6. Repeat to make 18 parcels.

  7. Place the filo parcels on a cookie sheet, well brushed with melted butter.

  8. Bake for approximately 10 minutes.

  9. Leave to cool and then dust with the confectioner's sugar, and then with the cocoa powder.

These exquisite little parcels are utterly irresistible. There will be no leftovers.
