Country Apple Flan Recipe

Ingredients :

3/4 tsp dried yeast

185 ml warm water

185 g flour, sifted

1/4 tsp salt

Apple Honey Filling :

2 tbsp honey, melted

3 green apples, cored, peeled and thinly sliced

2 tsp cinnamon sugar

2 tbsp brown sugar

Method :
  1. Dissolve yeast in water and stand in a warm, draught free place for 5 minutes or until frothy.
  2. Place flour and salt in a large bowl, make a well in the center of mixture, pour in yeast mixture and gradually stir in flour.
  3. Mix to form a dough.
  4. Turn dough onto a lightly floured surface and knead for 10 minutes or until dough is smooth and elastic.
  5. Place dough in a greased bowl, cover with plastic food wrap and set aside to stand in a warm, draught free place for 1 hour or until doubled in size.
  6. Punch dough down, cover with plastic food wrap and set aside to rise again for 30 minutes.
  7. Roll out dough to fit a 23 cm flan tin.
  8. Line pastry case with nonstick baking paper, weigh down with uncooked rice and bake for 15 minutes.
  9. Remove rice and paper from pastry case and brush with honey.
  10. Arrange apple slices in pastry case, sprinkle with cinnamon and brown sugar and bake for 30 minutes.

Serves 6

180oC/350oF/Gas 4
