Crystallized Carrots Recipe

Ingredients :

225 g carrots, peeled and shredded

225 g granulated sugar

zest and juice of 1 lemon

3 cardamom pods, slightly crushed

1 small piece ginger, peeled and left whole

Method :
  1. Place the shredded carrot in a deep, heavy based pan and cover with water.
  2. Bring to the boil and then allow to simmer until tender.
  3. Stir in the sugar and add the lemon zest and juice, cardamom seeds and ginger.
  4. Allow to simmer, stirring often.
  5. Bring to the boil and allow to cook rapidly just until the shreds of carrot are glazed with sugar.
  6. Remove the ginger and the cardamom seeds and spoon the mixture into sterilized jars.
  7. Seal and store in a cool place.
  8. Keep refrigerated after opening.

Serves 4
