Dill and Potato Cakes Recipe

Ingredients : |
2 cups
self rising flour
3 tbsp
butter, softened
pinch of
salt
1 tbsp
finely chopped fresh dill
scant 1
cup mashed potato, freshly made
2-3 tbsp
milk, as required |
Method :
- Preheat the oven to 450F.
- Sift the flour into a bowl, and add
the butter, salt and dill.
- Mix in the mashed potato and enough
milk to make a soft, pliable dough.
- Roll out the dough on a well floured
surface until is fairly thin.
- Cut into several neat round with a 3"
cuter.
- Grease a cookie sheet, place the cokes
on it, and bake for 20-25 minutes until risen and golden.
Potato cakes are quite scrumptious and
should be more widely made. Try this splendid combination and you are
sure to be converted.
Makes about 10 cakes
