Fruit Bread Pudding Recipe

Ingredients :

15 thick slices fruit bread

125 g butter, melted

 3 eggs

750 ml milk

125 g icing sugar

2 tsp vanilla essence

1 tsp ground nutmeg

3 tsp ground cinnamon

2 tbsp caster sugar

Method :
  1. Cut each slice of bread into nine squares and place in a large bowl.

  2. Pour over melted butter and toss to coat.

  3. Transfer bread to a greased baking dish.

  4. Place eggs, milk, icing sugar, vanilla essence, nutmeg and 2 tsp cinnamon in a bowl and whisk to combine.

  5. Strain egg mixture through a sieve, then carefully pour over bread.

  6. Sprinkle with caster sugar and remaining cinnamon and bake for 30 minutes.

Serves 4

Oven Temperature :

180oC, 350oF, Gas 4
