Method :

Cut each slice of bread into nine
squares and place in a large bowl.

Pour over melted butter and toss to
coat.

Transfer bread to a greased baking
dish.

Place eggs, milk, icing sugar, vanilla
essence, nutmeg and 2 tsp cinnamon in a bowl and whisk to combine.

Strain egg mixture through a sieve,
then carefully pour over bread.

Sprinkle with caster sugar and
remaining cinnamon and bake for 30 minutes.

180oC, 350oF, Gas 4
