Ginger Bread Cake Recipe

Ingredients : |
125 g
butter, melted
125 ml hot water
170 g golden syrup, warmed
125 g flour, sifted
60 g self raising flour, sifted
1/2 tsp bicarbonate of soda
4 tsp ground ginger
1/2 tsp ground nutmeg
90 g brown sugar
Lemon Icing :
220 g icing sugar, sifted
15 g butter, softened
2 tsp lemon juice
milk
2 tbsp desiccated coconut |
Method :
- Place butter, water and golden syrup
in a large bowl.
- Sift in flour, self raising flour,
bicarbonate of soda, ginger, nutmeg and sugar and mix to combine all
ingredients.
- Spoon batter into a greased 20 cm or
8" ring cake tin and bake for 35-40 minutes or until cake is cooked when
tested with a skewer.
- Stand cake in tin for 5 minutes before
turning onto a wire rack to cool.
- To make icing, place icing sugar in a
bowl, mix in butter, lemon juice and enough milk to make an icing of
spreadable consistency.
- Spread icing over cold cake and
sprinkle with coconut.
Makes a 20 cm
