Ginger Bread Recipe

Ingredients :

120 g butter or margarine

120 ml treacle or molasses

225 g light brown sugar

120 ml hot water

300 g whole wheat flour

10 ml baking powder

pinch salt

10 ml fresh ginger, peeled and grated

5 ml grated nutmeg

1 egg, beaten

Method :
  1. Melt the butter in a heavy based pan and stir in the molasses and sugar.
  2. Heat gently to dissolve molasses and sugar.
  3. Pour in the hot water, mix well and set the mixture aside.
  4. Sift the flour with the baking powder and salt into a large bowl.
  5. Return the bran from the flour to the bowl.
  6. Make a well in the center and add the nutmeg, ginger and beaten egg.
  7. Pour in the molasses liquid and begin beating with a wooden spoon, gradually drawing in the flour from the outside.
  8. Alternatively, use an electric mixer, but be careful not to over mix.
  9. Line a shallow round or square pan with lightly greased paper.
  10. Bake in a preheated oven for 1 hour, or until a skewer inserted into the center of the cake comes out clean.
  11. Serve with whipped or sour cream, or slice and spread with butter.

Makes : 1 cake
