Ginger Crunch Recipe

Ingredients : |

125 g
butter
185 g sugar
125 ml sweetened
condensed milk
1 tbsp golden syrup
250 g ginger nut biscuits, crushed
60 g pecans or walnuts, finely chopped
2 tbsp finely chopped glacé
ginger or stem ginger in syrup |
Method :
- Place butter, sugar, condensed milk
and golden syrup in a small saucepan and cook over a medium heat,
stirring constantly, until mixture is smooth.
- Bring to the boil, then reduce heat
and simmer for 3-4 minutes or until mixture thickens slightly.
- Place biscuits, pecans or walnuts and
glacé or stem ginger in a bowl, pour in condensed milk mixture and mix
until well combined.
- Press mixture into a lined, shallow 23
cm square cake tin and refrigerate until set.
- Cut into bars.
