Herb and Corn Muffins Recipe

Ingredients :

125 g plain flour

125g cornmeal

1/2 tsp salt

2 tsp baking powder

1 tbsp melted margarine

250ml low fat milk

1 egg, beaten

good pinch of black pepper

1/2 tsp dried mixed herbs

2 tbsp grated low fat hard cheese

Method :
  1. Sift flours, salt and baking powder into a bowl.
  2. Mix margarine, milk and egg and add to dry ingredients.
  3. Beat until smooth.
  4. Fold in seasonings and cheese and spoon mixture into lightly greased muffin tins.
  5. Bake in a preheated oven for 15-20 minutes until golden brown.

These wonderful savory muffins are great with corn or pumpkin chowder. Eat them fresh - they will not keep.

Makes : 12 muffins
