6 small
sprigs of mint plus 12 extra sprigs to decorate
1 tbsp
instant coffee granules
2 tbsp
boiling water
2/3 cup
heavy cream
Method :
Peel the fruit as necessary and chop
into equal sized pieces.
Place all the fruit in a large glass
bowl and pour on the lychee juice.
Put the mint, coffee granules and
boiling water in a food processor.
Blend until smooth.
Add the cream and process again
briefly.
Serve the fruit salad drained and
chilled, with two small sprigs of mint on each plate, and the coffee
sauce separately.
This dessert was served in a Japanese
department store. Although it sounds a little strange, it works very
well - the coffee flavor is excellent with the fruit.
