Nutmeg Fruit Loaf Recipe

Ingredients :

315 mixed dried fruit

250 ml water

2 tsp ground nutmeg

125 g butter

125 g sugar

1 egg

250 g self raising flour

1/2 tsp baking powder

125 g walnuts, roughly chopped

Method :
  1. Place fruit, water and nutmeg in a large saucepan, bring to the boil and boil for 3 minutes.
  2. Remove pan from heat and set aside to cool.
  3. Place butter and sugar in a bowl and beat until light and creamy.
  4. Add egg and continue to beat until well combined.
  5. Sift together flour and baking powder.
  6. Mix flour mixture and undrained fruit mixture, alternately, into butter mixture.
  7. Fold in walnuts.
  8. Spoon batter into a greased and lined 11 x 21 cm loaf tin and bake for 1 1/4 hours or until golden and cooked when tested with a skewer.
  9. Stand in tin for 5 minutes before turning onto a wire rack to cool completely.

Makes an 11 x 21 cm loaf

Oven Temperature :

180C/350F/Gas 4
