Method :
- Place fruit, water and nutmeg in a
large saucepan, bring to the boil and boil for 3 minutes.
- Remove pan from heat and set aside to
cool.
- Place butter and sugar in a bowl and
beat until light and creamy.
- Add egg and continue to beat until
well combined.
- Sift together flour and baking powder.
- Mix flour mixture and undrained fruit
mixture, alternately, into butter mixture.
- Fold in walnuts.
- Spoon batter into a greased and lined
11 x 21 cm loaf tin and bake for 1 1/4 hours or until golden and cooked
when tested with a skewer.
- Stand in tin for 5 minutes before
turning onto a wire rack to cool completely.
Makes an 11 x 21 cm loaf
