Method :
Remove the leaves from the pineapple,
remove the core and cut lengthwise into quarters; then cut away the
outer peel. Cut 3 pineapple quarters into large chunks, place in a food
processor, and puree. Strain the puree through a fine sieve. Combine the
pineapple puree, sugar, salt, peppercorns, spices and lemon juice in a
serving bowl. Slice the remaining pineapple quarter into 1/4-inch thick
slices. Clean and stem the strawberries, and cut them in quarters. Add
the strawberries to the bowl and refrigerate for at least 2 hours before
serving.
