Rosehip Syrup Recipe

Ingredients :

900 g rosehips

1 stick cinnamon

1150 ml or 4-5 cups water

340 g sugar

juice of 1 lemon

Method :
  1. Wash the rosehips well and chop them.
  2. Put into a large saucepan with the cinnamon and water and cover.
  3. Cook over slowly for 1 hour or until soft.
  4. Stir frequently.
  5. Strain and make up or reduce to 570 ml or 2 cups and stir in the sugar.
  6. Heat slowly to dissolve the sugar and then allow the mixture to boil until it becomes syrupy.
  7. Skim off scum from the surface as it forms.
  8. Add the lemon juice and pour into sterilized jars and seal.

Makes : 570 ml or 2 cups
