Spiced Banana Fritters Recipe

Ingredients :

6 very ripe bananas

2 eggs, separated

2.5 ml ground nutmeg

2.5 ml ground ginger

60 g plain or all purpose flour

oil for shallow frying

60 ml dark rum, optional

60 ml sugar

10 ml ground cinnamon

Method :
  1. Peel the bananas and slice into large pieces.
  2. Place in a bowl with the egg yolks, nutmeg and ginger.
  3. Beat with an electric mixer until well mixed but not completely smooth.
  4. Pour in enough flour to make a thick mixture.
  5. Beat the egg whites until stiff but not dry and fold into the banana mixture.
  6. Heat the oil in a large frying pan and drop in the banana mixture by spoonfuls.
  7. Fry the fritters until golden brown on both sides.
  8. Arrange on a serving plate and drizzle over the rum, if using.
  9. Mix the sugar and cinnamon together and sprinkle over the fritters before serving.
  10. Serve hot with cream if desired.
