Method :

Place butter and sugar in a bowl and
beat until light and fluffy.

Add eggs one at a time, beating well
after each addition.

Sift together flour, self raising
flour, bicarbonate of soda and mixed spice.

Place jam and milk in bowl and mix to
combine.

Fold flour mixture and jam mixture,
alternately, into butter and mixture and mix well to combine.

Spoon batter into a well greased 23 cm
or 9" ring tin and bake for 45 minutes or until cooked when tested with
a skewer.

Stand in tin for 5 minutes before
turning onto a wire rack to cool completely.
Makes a 23 cm or 9" ring cake
