Method :
- Preheat oven to 190C/375F/Gas 5.
- Grease a 450 g loaf tin.
- Stir together the flour, cornmeal,
sugar, baking powder, salt and coriander.
- Beat together the milk, oil and
egg.
- Add to the dry ingredients and
beat well.
- Put into the prepared tin.
- Bake for 30 minutes.
- Leave in the tin for 5 minutes,
then turn on to a wire rack to cool.
- Serve slightly warm.
A quickly made bread which should be
eaten when fresh and warm. It is a good accompaniment to bean dishes and
to salads.
