Spiced Cornbread Cooking Recipes

Ingredients :

100 g (100%) wholemeal plain flour

100 g fine cornmeal

1 tbsp dark soft brown sugar

3 tsp baking powder

1 tsp salt

1/2 tsp ground coriander

225 ml milk

3 tbsp vegetable oil

1 egg

Method :
  1. Preheat oven to 190C/375F/Gas 5.
  2. Grease a 450 g loaf tin.
  3. Stir together the flour, cornmeal, sugar, baking powder, salt and coriander.
  4. Beat together the milk, oil and egg.
  5. Add to the dry ingredients and beat well.
  6. Put into the prepared tin.
  7. Bake for 30 minutes.
  8. Leave in the tin for 5 minutes, then turn on to a wire rack to cool.
  9. Serve slightly warm.

A quickly made bread which should be eaten when fresh and warm. It is a good accompaniment to bean dishes and to salads.
