Spiced Crème Brûlée Recipe

Ingredients :

280 ml milk

280 ml double or heavy cream

1 stick cinnamon

10 ml coriander seed, slightly crushed

1 vanilla pod

4 egg yolks

25 ml cornflour or cornstarch

90 g sugar

Demerara or light brown sugar

Method :
  1. Pour the milk into a heavy based saucepan and add the spices and vanilla pod.
  2. Heat gently.
  3. Beat the egg yolks, cornflour and sugar together until light.
  4. Bring the milk and cream just to boiling point and strain onto the egg yolk mixture, pouring gradually and beating constantly.
  5. Return the custard to the rinsed out pan and place over gentle heat.
  6. Bring the mixture to the boil, stirring constantly with a wooden spoon.
  7. When the mixture coats the back of the spoon remove from the heat.
  8. Do not allow to boil rapidly.
  9. Strain into 4 ramekin dishes or custard cups.
  10. The custard should come almost to the top.
  11. Chill until set.
  12. Put the custards into a roasting pan and surround with ice.
  13. Preheat a grill or broiler to the highest temperature.
  14. Sprinkle a thin layer of the sugar over the top of each custard and put under the heat.
  15. Rotate the cups and move the pan around until the sugar melts and caramelizes.
  16. Chill until the sugar layer is hard and crisp.
  17. Serve with biscuits or cookies or fruit.
