Spiced Ginger Drops Recipe

Ingredients :

125 g flour, sifted

1/4 tsp ground ginger

1/4 tsp mixed spice

1/4 tsp ground cinnamon

1/2 tsp bicarbonate of soda

60 g butter, cut into pieces

90g brown sugar

2 tbsp golden syrup, warmed

1 tbsp finely chopped glacé

ginger or stem ginger in syrup

Method :
  1. Place flour, ground ginger, mixed spice, cinnamon and bicarbonate of soda in a large mixing bowl.
  2. Rub in butter until mixture resembles fine breadcrumbs.
  3. Stir in sugar, golden syrup and glacé or stem ginger.
  4. Turn dough onto a lightly floured surface and knead to form a soft dough.
  5. Roll rounded tsp of mixture into balls an place 3 cm apart on greased baking trays.
  6. Bake for 10-15 minutes or until golden.
  7. Transfer biscuits to wire racks to cool.

180C/350F/Gas 4
