Method :
- Preheat oven to 180C/350F/Gas 4.
- Grease two baking sheets.
- Beat together the sugar and fat
until soft and light.
- Beat in the egg, syrup, water and
vanilla essence.
- Sieve together the flour,
cinnamon, salt and soda.
- Fold into the creamed mixture.
- Mix in the oats and raisins.
- Put tablespoonfuls of the mixture
well apart on the baking sheets.
- Bake for 15 minutes.
- Lift carefully on to a wire rack
to cool.
These are large crisp cookies which are
easily made. They are good in a lunchbox, and delicious with tea or
coffee.
