Method :
Place the
plums, strawberries, and raspberries in a heavy based pan with the sugar
and water. Add the cinnamon stick, star anise, and cloves to the pan and
heat gently, without boiling, until the sugar dissolves and the fruit
juices run. Cover the pan and leave the fruit to infuse over very low
heat for about 5 minutes. Remove the spices from the compote before
serving warm, with natural yoghurt or fromage frais. Light
muscovado sugar has a mild, treacle flavor and is delicious in this
recipe. You could use soft light brown sugar, or even caster, if you
prefer.
