Method :

Preheat oven to 400C Gas Mark 6.

Grease a baking sheet.

Put the flour in a bowl and rub in the
butter until the mixture resembles breadcrumbs, then stir in the
salt and mixed spice.

Mix together well, then work in enough
water to make a stiff dough.

To make the filling, melt the butter
and stir in the fruit, sugar, mixed spice and lemon juice.

On a lightly floured surface, roll out
the pastry on an oblong.

Spread the filling on top, leaving a
border around the edge.

Roll up into a Swiss roll shape and
cut into 12mm in slices.

Place them on the baking sheet and
bake for 10-15 minutes, sprinkle with sugar.
