Spiced Rolls Recipe

Ingredients :

75 g

Filling

plain flour

butter or margarine

mixed spice

pinch of salt

sugar for sprinkling

dried fruit

sugar

mixed spice

few drop of lemon juice

Method :
  1. Preheat oven to 400C Gas Mark 6.

  2. Grease a baking sheet.

  3. Put the flour in a bowl and rub in the butter until the mixture resembles breadcrumbs, then stir in the salt and mixed spice.

  4. Mix together well, then work in enough water to make a stiff dough.

  5. To make the filling, melt the butter and stir in the fruit, sugar, mixed spice and lemon juice.

  6. On a lightly floured surface, roll out the pastry on an oblong.

  7. Spread the filling on top, leaving a border around the edge.

  8. Roll up into a Swiss roll shape and cut into 12mm in slices.

  9. Place them on the baking sheet and bake for 10-15 minutes, sprinkle with sugar.
