Spiced Wholemeal Shortbread Recipes

Ingredients :

150 g wholemeal self raising flour

1 tsp ground mixed spice

100 g butter

50 g light soft brown sugar

25 g ground hazelnuts

1 tsp grated lemon rind

Method :
  1. Preheat oven to 150C/300F/Gas 2.
  2. Lightly grease two 7" sandwich tins.
  3. Put flour and spice into a bowl and rub in the butter until the mixture is like fine breadcrumbs.
  4. Stir in sugar, nuts and lemon rind.
  5. Press mixture into the prepared tins.
  6. Bake for 45 minutes.
  7. Using a sharp knife, mark the shortbreads into 8 segments.
  8. Cool in tins for 10 minutes.
  9. Turn on to a wire rack to cool.
  10. When cold, break into pieces.
