Spicy Pumpkin Flan Recipe

Ingredients : |
Pastry:
175g wholemeal flour
1 tsp ground mixed spice
75g butter, cut into small pieces
25g soft brown sugar
2 tbsp water
Filling:
4 tbsp mincemeat
2 eggs, beaten
500g cooked pumpkin, pureed
75g caster sugar
1 tsp ground mixed spice
150ml double cream |
Method :
- Place the flour and spice in a bowl
and rub the butter until the mixture resembles breadcrumbs.
- Stir in the sugar and water, mix to a
firm dough and knead lightly.
- Roll out and use to line a 23cm fluted
flan tin, chill for 30 minutes.
- Line the pastry case with nonstick
baking paper and baking beans and bake in oven 375F, gas mark 5, 15
minutes.
- Remove the paper and beans and cook
for 15 minutes.
- Cover the flan base with the
mincemeat, beat the eggs, pumpkin puree, sugar, spice and 3 tbsp of the
cream together.
- Pour into the pastry case and return
to the oven for 20-25 minutes, until set.
- Leave in the tin until cool, carefully
place on a serving plate.
- Whip the remaining cream and pipe
swirls around the edge.
