Spicy Pumpkin Flan Recipe

Ingredients :

Pastry:

175g wholemeal flour

1 tsp ground mixed spice

75g butter, cut into small pieces

25g soft brown sugar

2 tbsp water

Filling:

4 tbsp mincemeat

2 eggs, beaten

500g cooked pumpkin, pureed

75g caster sugar

1 tsp ground mixed spice

150ml double cream

Method :
  1. Place the flour and spice in a bowl and rub the butter until the mixture resembles breadcrumbs.
  2. Stir in the sugar and water, mix to a firm dough and knead lightly.
  3. Roll out and use to line a 23cm fluted flan tin, chill for 30 minutes.
  4. Line the pastry case with nonstick baking paper and baking beans and bake in oven 375F, gas mark 5, 15 minutes.
  5. Remove the paper and beans and cook for 15 minutes.
  6. Cover the flan base with the mincemeat, beat the eggs, pumpkin puree, sugar, spice and 3 tbsp of the cream together.
  7. Pour into the pastry case and return to the oven for 20-25 minutes, until set.
  8. Leave in the tin until cool, carefully place on a serving plate.
  9. Whip the remaining cream and pipe swirls around the edge.
