Strawberry Mint Cake Recipe

Ingredients :

6-10 fresh mint leaves, plus more to decorate

3/4 cup superfine sugar

3/4 cup butter, plus extra to grease pan

3 eggs

1 1/2 cup self rising flour

2 1/2 pint strawberry ice cream

2 1/2 cups heavy cream

2 tbsp mint liqueur

2 cups fresh strawberries

Method :
  1. Teas the mint leaves into small pieces and mix with the superfine sugar.
  2. Leave overnight.
  3. Grease and line a deep spring form cake pan.
  4. Preheat the oven to 375F.
  5. Remove the mint from the sugar.
  6. Mix the butter and sugar together and add the flour, then the eggs.
  7. Pile the mixture into the pan.
  8. Bake for 20-25 minutes, or until a skewer or pointed knife inserted in the middle comes away clean.
  9. Turn out on to a wire rack to cool.
  10. When cool, carefully split horizontally into two equal halves.
  11. Clean the cake pan and line it with plastic wrap.
  12. Put the bottom half of the cake back in the pan.
  13. Spread on the ice cream mixture and level the top.
  14. Put on the top half of the cake and freeze for 3-4 hours.
  15. Whip the cream with the mint liqueur.
  16. Remove the cake from the freezer and quickly spread a layer of whipped cream all over it, leaving a rough finish.
  17. Put the cake back into the freezer until about 10 minutes before serving.
  18. Decorate the cake with the strawberries and place fresh mint leaves on the plate around the cake.

This combination of fruit, mint and ice cream is a real winner.
