Sultana Pikelets Recipe

Ingredients : |
125 g
flour
1 tsp
baking powder
1 tsp
mixed spice
3 tbsp
caster sugar
3 tbsp
chopped sultanas
1 egg,
lightly beaten
125 ml
milk
4 tbsp
cream |
Method :
- Sift together flour, baking powder and
mixed spice into a large bowl.
- Stir in sugar and sultanas, then make
a well in the center of mixture.
- Place egg, milk and cream in a small
bowl and whisk to combine.
- Gradually stir egg mixture into dry
ingredients and mix until batter is smooth.
- Cook dessertspoonfuls of mixture in a
heated, greased, heavy based frying pan until bubbles appear on the
surface, then turn and cook until golden brown.
Makes 20 pikelets
