Summer Fruit Gāteau With Heartsease Recipes

Ingredients :

scant 1/2 cup soft margarine, plus more to grease mold

scant 1/2 cup sugar

2 tsp clear honey

1 1/4 cups self rising flour

1/2 tsp baking powder

2 tbsp milk

2 eggs, plus white of one more for crystallizing

1 tbsp rosewater

1 tbsp Cointreau

16 heartsease pansy flowers

superfine sugar, as required, to crystallize

confectioners' sugar, to decorate

1 lb strawberries

strawberry leaves, to decorate

Method :
  1. Preheat the oven to 375F.
  2. Grease and lightly flour a ring mold.
  3. Take a large mixing bowl and add the soft margarine, sugar, honey, flour, baking powder, milk and 2 eggs to the mixing bowl and beat well for 1 minute.
  4. Add the rosewater and the Cointreau and mix well.
  5. Pour the mixture into the pan and bake for 40 minutes.
  6. Allow to stand for a few minutes and then turn out onto the plate that you wish to serve it on.
  7. Crystallize the heartsease pansies, by painting them with lightly beaten egg white and sprinkling with superfine sugar.
  8. Leave to dry.
  9. Sift confectioners' sugar over the cake.
  10. Fill the center of the ring with strawberries - if they will not all fit, place some around the edge.
  11. Decorate with crystallized heartsease flowers and some strawberry leaves.

No one could resist the appeal of little heartsease pansies. This cake would be lovely for a sentimental summer occasion in the garden.
