Walnut and Spice Pudding Recipe

Ingredients :

75 g butter

90 g brown sugar

1 egg

125 g self raising flour, sifted

1 tsp ground ginger

1/4 tsp ground nutmeg

1/2 tsp ground cinnamon

1/4 tsp ground cloves

1/4 cup milk

4 tbsp chopped walnuts

Method :
  1. Place butter and sugar in a bowl and beat until light and fluffy.

  2. Beat in egg, then flour, ginger, nutmeg, cinnamon and cloves.

  3. Stir in milk and walnuts and mix well to combine.

  4. Spoon batter into a greased 4 cup pudding basin, cover basin with foil, then place in a baking dish with 4 cm boiling water in the base.

  5. Bake for 1 1/2 - 1 3/4 hours or until pudding is cooked when tested with a skewer.

  6. Allow pudding to stand in a basin for 10 minutes before turning out and serving.

Serves 4

180oC, 350oF, Gas 4
