Method :
- Toast the walnuts and, when cool,
grind in a food processor.
- Add the sugar, oil and butter to
the walnuts and mix well.
- Then add the lemon extract, salt
and flour, and blend until the mixture is smooth.
- Roll the dough into walnut sized
balls and put onto a well greased baking tray.
- Bake in a preheated oven
(190C/375F/Gas 5) for 30 minutes or until the biscuits are cooked.
- Leave to cool on a wire rack.
