Angelica Liqueur Recipe

Ingredients :

1 tsp fennel seeds

1 tsp aniseed

20 coriander seeds

2-3 cloves

2 tbsp crystallized angelica stems

1 cup superfine sugar

1 bottle vodka

Method :
  1. Crush the fennel, aniseed and coriander seeds and cloves a little, and chop the crystallized angelica stems.
  2. Put the seeds and angelica stems into a large preserving jar.
  3. Add the sugar.
  4. Pour on the vodka and leave by a sunny window for 2 weeks, swirling the mixture daily.
  5. Strain through fine muslin into a sterilized bottle and seal.
  6. Leave in a dark cupboard for at least 4 months.
  7. Drink in small quantities with a piece of angelica in each glass.

This should be drunk in tiny glasses after a large meal. Not only will it help the digestive system, it tastes superb.

Serves 1 1/4 quarts
