Elderflower Sparkler Recipe

Ingredients :

3 1/2 cups superfine sugar

2 cups of hot water

4 large fresh elderflower heads

2 tbsp white wine vinegar

juice and pared rind of 1 lemon

8 1/2 pints water, heated almost to boiling

Method :
  1. Mix the sugar with the hot water.

  2. Pour the mixture into a large grass or plastic container.

  3. Add all the remaining ingredients.

  4. Stir well, cover and leave for about 5 days.

  5. Strain off the liquid into sterilized screw top bottles (glass or plastic).

  6. Leave for a further week or so.

  7. Serve very cold with slivers of lemon rind.
