Melon, Ginger and Borage Cup Recipe

Ingredients :

1/2 large honeydew melon

1 quart ginger beer

1 tsp powdered ginger, or to taste

borage sprigs with flowers, to decorate

Method :
  1. Discard the seeds from the half melon and scoop the flesh into a food processor.
  2. Blend to a thin purée.
  3. Pour the puree into a large jug and top up with ginger beer.
  4. Add powdered ginger to taste.
  5. Pour into glasses and decorate with borage.

Melon and ginger complement each other magnificently. If you prefer, you can leave out the powdered ginger - the result is milder but equally delicious.

Serves 6 - 8
