Method :
- Purée the strawberries and mint leaves
in a food processor.
- Strain through a fine sieve into a
bowl.
- Half fill a glass with the mixture and
top up with champagne.
- Decorate with a sprig of mint.
This is a simple concoction that make a
bottle of champagne go a lot further. It tastes very special on a hot
summer's evening.
