Hot Chili Pork Spareribs Recipes

Ingredients :

6 small pork back rib racks

freshly ground black pepper

125 ml apple juice

dash Tabasco sauce

Apple Chili Glaze :

1 tbsp vegetable oil

2 onions, finely chopped

2 cloves garlic, crushed

1 fresh red chili, seeded and chopped

125 g canned apple purée

315 g apple jelly

125 ml apple juice

2 tbsp lime juice

Method :
  1. Season ribs with black pepper to taste and place in a shallow glass or ceramic dish.
  2. Combine apple juice, lime juice and Tabasco sauce, pour over ribs and toss to coat.
  3. Cover and refrigerate for 1-2 hours.
  4. To make glaze, heat oil in a saucepan, add onions, garlic and chili and cook over a medium heat for 10 minutes or until onions are soft.
  5. Stir in apple purée, jelly and juice, bring to simmering and simmer, stirring frequently, for 15 minutes or until mixture thickens.
  6. Stir in lime juice, season to taste with black pepper and simmer for 15 minutes longer.
  7. Drain ribs, and reserve any remaining marinade.
  8. Sear ribs on a preheated lightly oiled barbecue for 5 minutes longer.
  9. Serve ribs with remaining glaze.
