Pork Vindaloo Recipes

Ingredients : |
750 g lean
pork, diced
2 onions,
chopped
3 cloves
garlic, crushed
440 g
canned tomatoes, undrained and chopped
2 tsp
ground cumin
2 tsp
mustard seeds
2 tsp
ground cinnamon
1 tsp
ground turmeric
1 tsp
chili paste (sambal oelek)
60 ml
white vinegar
1 tbsp
brown sugar
3 tbsp
natural yoghurt
2 tbsp
lime juice
freshly
ground black pepper
500 ml
chicken stock
2 tbsp
chopped fresh coriander |
Method :
- Place pork, onions, garlic,
tomatoes, cumin, mustard seeds, cinnamon, turmeric, chili paste
(sambal oelek), vinegar, sugar, yoghurt, lime juice and black pepper
to taste in a glass or ceramic bowl and mix to combine.
- Cover and marinate in the
refrigerator for at least 3 hours.
- Transfer pork mixture to a large
saucepan, stir in stock and bring to simmering.
- Cover and simmer, stirring
occasionally, for 1 hour or until pork is tender.
- Just prior to serving, stir in
coriander.
