Melt butter in a large frying pan,
add steaks and cook for 4-5 minutes each side or until cooked to
your liking.
Remove steaks from pan, set aside
and keep warm.
To make sauce, add spring onions
to pan and cook for 1 minute.
Stir in wholegrain mustard, Dijon
mustard, wine, water, honey and thyme and cook over a medium heat,
stirring for 3-4 minutes or until sauce reduces slightly.
Remove pan from heat and stir in
cream and cheese.
