Curried Onion Puffs Recipes

Ingredients :

24 prepared small choux puff cases or

small cooked vol-au-vent pastry cases

Curried Onion Filling :

30 g butter

2 onions, chopped

2 tsp curry powder

125 ml cream (double)

freshly ground black pepper

Method :
  1. To make filling, melt butter in a saucepan over a medium heat, add onions and cook, stirring for 5 minutes or until onions are golden brown and soft.
  2. Stir in flour and curry powder and cook for 1 minute longer.
  3. Stir in cream, bring to the boil and cook, stirring constantly, until mixture boils and thickens.
  4. Season to taste with black pepper.
  5. Spoon filling into choux puffs or vol-au-vent cases, place puffs on oven trays and bake for 10 minutes or until heated through.

Serves 24

Curry powder is a combination of spices which usually includes turmeric, coriander, chili, cumin, ginger, black pepper, fenugreek and cardamom.

Oven Temperature :

180oC, 350oF, Gas 4
